asparagus with lemon and mint sauce
This makes a lovely starter or accompaniment.

Ingredients (makes 4 servings)

2 pounds fresh asparagus, trimmed
1 tablespoon butter or olive oil
2 tablespoons lemon juice
1/4 cup minced fresh mint leaves
1/4 - 1/2 tsp ground cardamom (optional)


Method

1. Put the asparagus in an asparagus pot with enough water to touch the bottom of the asparagus. asparagus pot

2. Cover and steam over medium-high heat until tender (5 to 8 minutes).

3. Drain.

4. Heat butter or oil, cardamom, lemon juice and mint in small saucepan over a low heat. When hot, pour over asparagus and serve.
